Ingredients

1 Large fryer , boiled in onion, celery and bell pepper and deboned

6 tbsp butter

2/3 cup flour

2 cups of broth

2 1/4 tsp Tony’s Creole seasoning

1 1/4 tsp pepper

2 tsp chopped parsley

4 eggs

4 tbsp of milk

3 cups of bread crumbs

oil for frying

Preparation

melt butter in saucepan over low heat stir in flour gradually add broth add Tony’s seasoning and pepper cook until thick add 2 beaten eggs cool add it to the chicken slowly until desired consistency shape into croquettes

beat 2 eggs and add milk roll croquettes in mixture then in bread crumbs. cool in refrigerator for at least 1 hr
