Ingredients

4 plum tomatoes, halved lengthwise

Evoo for drizzling

Kosher or sea salt, freshly ground pepper

1-2 Tsp dried Thyme

8 1/2 inch thick baguette slices cut on bias

1 clove garlic

Preparation

Pre heat oven 275 degrees. Place tomatoes cut side up in shallow baking dish. Drizzle with evoo and sprinkle with salt, pepper anf thyme. Roast 1 hour and 30 minutes to 2 hours or until soft and slightly shrunken. Increase oven to 400 degrees. Place baguette slices on baking shet, drizzle with evoo and bake until golden, about 10 minutes. Rub each toast with garlic and top with a roasted tomato.
