Ingredients

180g Butter

30ml Golden Syrup

5ml Bicarbonate of Soda

125g Plain Flour

180g Oatmeal

250g Sugar

80g Desicated Coconut

Optional: Add up to 250g chopped nuts to the dry ingredients

Preparation

Heat butter & syrup to boiling point Add bicarb of soda Sieve flour, mix in oatmeal, sugar & coconut Add butter syrup mix and mix well press evenly into lightly greased swiss roll tin (38cm x 25cm) Bake at 180*C for 15-20 min until golden brown on top. Allow to cool for 3 minutes Cut into squares while in tray After 10 minutes, remove & allow to cool on wire rack
