firm ripe large pears

cup orange juice

1/4

cup peach or apricot preserves

1/4

cup vanilla wafer crumbs

1/4

cup finely chopped almonds

1

container (6 oz) orange low-fat yogurt (2/3 cup)

Ground cinnamon, if desired

Preparation

Move oven rack to lowest position. Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. Carefully peel pears, leaving stems attached; place on large plate. In small bowl, mix orange juice and preserves; brush evenly over pears.

In another small bowl, mix wafer crumbs and almonds. Sprinkle crumb mixture evenly over pears; press in gently. Stand pears upright in pie plate. Mix yogurt and remaining preserves mixture from plate; refrigerate.

Bake pears 35 to 45 minutes or until tender when pierced with fork (baking time may vary due to size of pears). Serve warm with yogurt sauce; sprinkle with cinnamon.
