Ingredients

12 whole new potatoes

3 T olive oil

Kosher salt to taste

Black pepper to taste

Rosemary or other herbs to taste

Preparation

Bring a pot of salted water to boil. Add potatoes and cook until fork tender - drain. On a sheet pan generously drizzle olive oil. Place potatoes on oiled sheet leaving plenty of room between each. With a potato masher, gently press down on each potato. Rotate potato to 90 degrees and mash down again. Brush tops of potatoes generously with olive oil. Sprinkle potatoes with salt and pepper and herbs. Bake at 450 degrees for 20-25 min
