Ingredients
1 T coriander seeds
1 1/2 lb. new potatoes
Salt
1/2 c. creme fraiche
2 T unsalted butter
Black pepper to taste
2 T fresh chives (optional)
Preparation
- Toast coriander seeds over low heat 3-4 min. 2)Crush seeds using the side of a chef’s knife or in a mortar and pestle. Set aside.
- Boil potatoes until tender, about 20 min. Drain and return to pot until ready to serve
- Peel if desired; lightly crush with masher or fork. Sprinkle with sea salt.
- Stir creme fraiche and spoon over potatoes.
- Cut up butter and sprinkle on top, adding more salt and pepper to taste.
- Top with chives.
