Ingredients

1 T coriander seeds

1 1/2 lb. new potatoes

Salt

1/2 c. creme fraiche

2 T unsalted butter

Black pepper to taste

2 T fresh chives (optional)

Preparation

  1. Toast coriander seeds over low heat 3-4 min. 2)Crush seeds using the side of a chef’s knife or in a mortar and pestle. Set aside.
  2. Boil potatoes until tender, about 20 min. Drain and return to pot until ready to serve
  3. Peel if desired; lightly crush with masher or fork. Sprinkle with sea salt.
  4. Stir creme fraiche and spoon over potatoes.
  5. Cut up butter and sprinkle on top, adding more salt and pepper to taste.
  6. Top with chives.
