Ingredients

4 Pcs serving-sized salmon

Lemon juice

1/4 Cup melted butter

3 Tbs Dijon mustard

1-1/2 Tbs honey

1/4 Cup cracker crumbs

1/4 Cup finely chopped pecans

4 Tsp chopped fresh basil or parsley

Preparation

Preheat oven to 400 degrees. Melt butter before placing salmon in baking dish, sprinkle salmon with lemon juice. In small bowl, mix melted butter, Dijon mustard and honey. In another bowl, mix cracker crumbs, pecans and herb. Coat one side salmon with layer of butter/mustard/honey mixture, then cracker/pecan/herb mix. Turn over and repeat this step. Bake 12-15 minutes or until pink disappears and salmon easily flakes. Garnish can be fresh parsley or basil; add ground pepper, lemon juice as desired.
