Ingredients

1 chicken, 2-3 lbs., cut into serving pieces

1 teaspoon kosher salt

Freshly ground black pepper

1 egg, well beaten

2 cups breadcrumbs

2 tablespoons melted butter

2 tablespoons flour

1-1/2 cups chicken stock or water

Preparation

  1. Preheat oven to 400 degrees F. Arrange chicken in a flame-proof baking dish (metal is best), skin side up; sprinkle with salt and pepper; brush generously with beaten egg; sprinkle immediately with crumbs (so they stick well); dribble melted butter over chicken. Bake uncovered in oven for 50 minutes, until chicken is tender.

  2. Remove chicken pieces and keep warm; place roasting pan over high heat, add flour and stock or water, and bring to boil, stirring constantly; check seasoning. Serve chicken with gravy and rice or mashed potatoes.
