Ingredients

olive oil, 2 tbsp

garlic, 1 tbsp minced

ginger, 1tbsp, minced

coriander, 1tbsp fresh cracked seed

mustard seeds, 1tbsp

cinnamon, 1 tpsp crushed stick

salt, Kosher, to taste

skirt steak, 2 lb. cut into 8-oz. portions

Preparation

Heat oil in a medium saute pan over medium heat till hot but not smoking.

Add ginger & garlic. Saute 1 minute.

Add Coriander, cumin,mustard, chile powder, cinnamon and cook, stirringtill spices begin to darken and raise strong aroma (2-3 minutes). Remove from heat.

When cool, sprinkle steak with salt then rub all over with spices, pressing to adhere.

Grill directly over the heat 4-5 minutes each side for medium rare.

Slice thinly across the grain and serve.
