Ingredients

10 oz firm, fresh ginger with minimal extraneous protrusion

2 C sugar

water

Preparation

Peel remove secondary knobs cut into 2" lengths, slice into 1/8th inch slices punch holes in the slices. toss with sugar in 6-8" iron frying pan or heavy wok, put in 1 T water, pour in ginger/sugar and bring slowly to gentle simmer stir occasionally for an hour lower to VERY SLOW simmer, sitrring occly, until gets thick, crystallizes soon will bubble slowly all over the surface, crystallizing more and more when masses when stirred, take off heat and toss gently while cooling. if done right, the slices will separate from sugar spread on tray to cool and dry. store airtight, dark and cool
