Ingredients

2 cups of dried black beans, sorted, rinsed

1 large onion, chopped

1 large bell peppers, chopped (1 1/2 cups)

5 gloves garlic, finely chopped

2 dried bay leaves

1 can (14.5 oz) dried tomatoes, undrained

5 cups of water

2 tablespoons olive oil or vegetable oil

4 teaspoons ground cumin

2 teaspoons finely chopped jalepeno chili

1 teaspoon salt

2 cups of cooked rice

Preparation

  1. In 3 to 4 quart,in slow cooker, mix all ingredients except rice.
  2. Cover and cook on High setting 6 to 8 hours, do no exceed 8 hours
  3. remove bay leaves. serve beans over rice
