Ingredients

1 tbl plus 1.5tsp olive oil

4 cloves garlic, minced

1/4 cup orange juice

1/4 cup lime juice

2 tbl white wine

2 tbl water

1/4 tsp dried oregano

1/8 tsp ground pepper

2 lb trimmed whole boneless pork loin

Preparation

Heat oil in small saucepan over low heat. Combine garlic,juices,wine,water,salt,oregano and pepper in a small non-reactive bowl. Add to oiland cook 2 minutes. Remove from heat and cool. Place pork in a large food storage bag, add marinade and refrigerate for up to 48 hours. Heat oven to 350F Drain and reserve marinade. Bake pork until thermometer reads 160F about 35-40 minutes. Let stand 5 minutes before slicing. Add reserved marinade to roasting pan; heat to boil over medium high heat. Boil 1 minute and pour sauce over meat.
