Ingredients

1 cup uncooked brown rice

2 Tbsp. vegetable oil

2 plantains, peeled and cubed

1 lg. yellow onion, diced

1 green pepper, seeded & diced

1 cup vegetable stock

2 15 oz. cans of black beans, drained and rinsed

1 tsp. ground cumin

salt and pepper to taste

Possible Garnishes:

1/2 lg. red onion, chopped

1/2 cup cilantro

1 bunch sliced scallions

Preparation

  1. Cook rice and set aside.
  2. Heat 1 T. oil over medium heat. Cook plantains for 4-5 minutes until golden. Remove from heat.
  3. Heat remaining oil and saute the onion and pepper for 7-10 minutes. Add stock, beans, cumin, salt and pepper, and cook for 5 more minutes. Mix with plantains.
  4. Serve bean mixture over brown rice. Garnish, if desired.
