Ingredients

8-10 cucumbers, peeled and sliced thin

3 large onions, peeled and sliced thin

Kosher salt

2 tablespoons dried dill

1/4 cup sugar

1/4 cup white vinegar

1/2 cup water

Preparation

As you peel and slice the cucumbers, place them in a large pot. After you peel 2 cucumbers, sprinkle generously with kosher salt. Repeat until all of the cucumbers are peeled and sliced. Fill pot with cold water to cover cucumbers and add a tray of ice. Stir until ice is melted.

Drain - cover with water - add ice - stir until ice is melted.

Drain again.

Mix together vinegar, water and sugar - taste and add sugar or vinegar to taste (I prefer it on the sweet side)

Pour over cucumbers - add dill weed and stir until dill is mixed throughout.

Put into zip loc bag(s) and squeeze air out. Place in refrigerator and let salad sit at least overnight.
