large red tomato, sliced

large yellow tomato, sliced

medium cucumber, sliced

oz. fresh mozzarella cheese, sliced

tablespoons extra-virgin olive oil

tablespoon lemon juice

teaspoon salt

teaspoon freshly ground black pepper

1/3

cup coarsely chopped fresh basil or lemon basil

Preparation

On large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.

In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil.
