Ingredients

I seedless cucumber, diced

3-4 medium red beets, peeled and cooked then diced

1 cup frozen petite peas, thawed

1/2 cup creme fraiche

Juice and zest of a small lemon

1/2 cup fresh mint leaves, chopped

1/2 tablespoon olive oil

Salt and pepper to taste

Preparation

Combine cucumber, beets and peas in a salad bowl. In a separate bowl, combine creme fraiche and lemon juice and zest. Stir in mint then add the olive oil and mix until well blended. Add salt and pepper to taste. Pour the dressing over the vegetables and toss to coat. Serve immediately. (Can prepare dressing. Stir then pour over vegetables immediately before serving).
