Ingredients
8 oz. Bow tie pasta
1 Tbls. Olive oil
2 medium cucumbers sliced thin, peeled
1 medium onion
1 c. Sugar
1 c. Water
3/4 cup white vinegar
1 tablespoon prepared mustard
1 tablespoon dried parsley
1 teaspoon salt
1 teaspoon pepper
1 or 2 cloves of garlic, pressed
Preparation
Prepare pasta according to package directions. Drain and rinse in cold water. Stir in oil, cucumbers, and onion. Combine remaining ingredients and mix well. Pour over salad. Toss to coat. Cover and chill 3 to 4 hours, stirring occasionally.
