Ingredients

Cucumber Rolls

1 English cucumber, trimmed & sliced paper thin into long strips

1 cup red tip lettuce, trimmed & cleaned, torn into small pieces

1/2 cup Bibb lettuce trimmed & cleaned, torn into small pieces

1/4 cup raddichio, finely julienned

1/4 cup green onion, chopped

1/4 cup bean sprouts

1/2 cup carrots, shredded

pinch of salt

Black Garlic-Miso Dressing

1/2 cup black garlic, peeled and finely chopped

1/2 cup yellow miso paste

2 teaspoons ginger, peeled & chopped

1/4 cup rice wine vinegar

1 tablespoon soy sauce

2 teaspoon sesame oil

1/2 cup water

Preparation

For the cucumber rolls:

  1. Lay out slices of cucumbers.
  2. Mix remaining ingredients together in large bowl.
  3. Place small portions of salad onto cucumber slices and roll tightly.

For black garlic-miso dressing:

  1. Place all ingredients into blender or food processor and puree until smooth.
  2. Refrigerate, covered, until ready to use.
