Ingredients

1 1/2 lb peeled cucumbers

1/4 cup onion, peeled and chopped

1/4 cup green onions, chopped

1 T parsley or dillweed

1/3 cup apple cider vinegar

2 tsp salt

2 tsp sugar

1 T pimento

3/4 cup sour cream

Dash pepper

Preparation

Slice cucumbers thin. Sprinkle with salt and vinegar. Add onions, chopped or sliced fine.

Let stand for two hours. Drain in colander and press lightly. Add the remaining ingredients and an additional teaspoon of vinegar or lemon juice.
