Ingredients

English seedless cucumbers - 2-3 for 4-6 people

Feta cheese, original flavor- crumbled is easier, but the block goes MUCH further, slice & cube

Fresh dill- wash and chop

Red onion- about 1/3 to 1/2 onion diced

Olive Oil- 2-3 Tbsp; add lightly, stir, & taste

Lemon Juice- fresh squeezed; use 1/2 lemon, taste, then add more if desire

Kosher salt & Black pepper- sprinkle & taste (we like a bit more salt & pepper with this recipe)

Preparation

*Prepare and refrigerate an hour ahead or just before serving. Would recommend not making this too far in advance.
