Ingredients

1 Large cucumber, thinly sliced

1/2 medium red onion, quartered and thinly sliced

1/2 c seasoned rice vinegar

1 small drop Stevia

1/3 to 1/2 t fresh chili paste (sub red pepper flakes if needed

1/2 t sweet cooking rice wine (optional)

pinch of salt (or to taste)

Preparation

  1. Mix the vinegar, rice wine, sugar and chili paste together in a small bowl until the sugar is completely dissolved and set aside.
  2. Thinly slice the cucumber and onion and place them in a large colander. Sprinkle thoroughly with salt and let sit for 1/2 hour. Rinse and squeeze water out.
  3. Season the cucumbers and onions with salt.
  4. Pour the vinegar mixture over the cucumber and onion slices. Toss to coat and serve chilled
