Ingredients

1/2 c. cider vinegar

2 tbsp water

1 tbsp sugar

1 tbsp canola oil

3/4 teaspoon salt

1/4 tsp fresh ground black pepper

4 c. thinly sliced peeled cucumber

1/2 c. vertically sliced red onion

1 jalapeno pepper seeded and chopped

1/4 c. crumbled feta cheese

Preparation

  1. Combine first 6 ingredients in a medium bowl, stirring with whisk until blended. Add cucumber, onion and jalapeno, toss to coat. Cover and chill until ready to serve, sprinkle evenly with cheese.
