Ingredients
2 medium cucumbers, peeled and cut into 1/2" dice
6 ripe plum tomatoes or 3 ripe medium tomatoes of any variety, seeded and cut into 1/2" dice
about 1/3 Cup Kalamata olives, pitted and cut in half
4-6 oz feta cheese, crumbled
1/4-1/3 Cup good EV Olive Oil
1/3-1/2 Cup Red Wine vinegar
1-2 Tbsp dried Thyme
or 2-3 Tbsp fresh thyme
Preparation
combine all ingredients in a bowl, cover and chill for at least 1 hour. This is great the next, day, too.
