Ingredients
3 T. olive oil
1 1/2 T. lemon juice
1 t. Dijon mustard
1/8 t. salt
1/8 t. pepper
1/3 c. sliced ripe olives, drained
2 tomatoes, cut into 8 wedges each
1 medium cucumber, sliced
Lettuce leaves
Preparation
Combine first five ingredients, stirring well with a small whisk. Combine olives, tomato and cucumber in a bowl. Pour dressing mixture over tomato mixture; toss. Cover and chill 30 minutes. Serve on lettuce leaves.
