Ingredients

1 lb. shredded chicken

1 roasted red pepper (canned)

1/2 cup diced celery

1/4 cup red pepper juice

1 Tbs. light sour cream

1 Tbs. light Miracle Whip

1 tbs. Old Bay seasoning

2 tbs. cumin

1/2 tbs. lemon juice

ground pepper

Preparation

Finely chop the roasted red pepper. Combine with chicken, celery, sour cream, Miracle Whip, Old Bay, cumin, and lemon juice. Add ground pepper, chives, and red pepper juice (from the can) to taste.

Allow to refrigerate for 2-3 hours and serve cold on a salad or between your favorite slices of bread.
