Ingredients
2 c. cake flour
2 T sugar
1 T baking powder
1/2 t salt
1/4 c. chilled unsalted butter cut into pieces
1 c. chilled whipping cream
1/3 c. dried currants
Powdered sugar
Preparation
- Stir first 4 ingredients in large bowl.
- Add butter, cut in by hand or by pulsing processor.
- Add cream and currants, stir until moist clumps form.
- Gather dough, transfer to floured working surface.
- Flatten into 3/4 in thick round.
- Cut out rounds with 2 in cutter; gather scraps reform and cut out additional rounds.
- Preheat oven to 425.
- Chilld rounds 20 min. covered on sheet.
- Bake uncovered until golden, about 10 min.
- Cool 5 min. and dust with powdered sugar. Best warm.
