Ingredients

Curried Dressing

1 egg

1 cup corn oil

1/4 cup vinegar

1 1/2 teaspoons salt

1 teaspoon pepper

1 teaspoon minced garlic

1/2 teaspoon sugar

1/2 teaspoon turmeric

1/2 teaspoon coriander

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon dry mustard

1/4 teaspoon cardamom

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1/8 teaspoon ground cumin

1/8 teaspoon cayenne pepper

Salad

2 pounds boneless chicken breast, cooked and cubed

1 1/4 cups celery, sliced 1/4" thick

2 cups pineapple, cubed

1/2 cup raisins

3/4 cup macadamia nuts

1/2 head romaine lettuce

Preparation

  1. Whiz egg in food processor. Gradually add corn oil. Add remaining dressing ingredients.

  2. Combine salad ingredients with dressing. Serve over lettuce.
