Ingredients

2 to 3lbs boneless chicken breast–cubed

1 tsp curry powder

2 tbs dried diced onion

2 cups of mayonaise

3 tbs sugar–may use substitute for those on limited sugar intake

3 tbs sweet pickle relish

Preparation

put chicken cubes, curry powder and onion in large pan and bring to a boil, reduce heat to simmer and cover with lid. cook for 30 minutes. Remove from heat and cool, then place in a covered bowl overnite in refrigerator. (you can rush recipe after 3 to 4 hours cooling-but it taste better overnite) Add mayonaisere, relish and sugar and mix well. Serve on a bed of lettuce, in a wrap or on fresh sour dough bread.
