Ingredients

3 whole chicken breasts

1 1/2 C. mayonnaise

1/3 C. dry white wine

1/4 C. Major Grays chutney

3 T. curry powder

1 C. diced celery (2 stalks)

1/4 C. chopped scallion

1/4 C. raisins

Preparation

Preheat oven to 350 degrees. Place chicken on pan and rub with oil. Sprinkle liberally with salt and pepper. Roast until chicken is just done. Set aside until cool.

Combine mayonnaise, wine, chutney, curry powder and 1/2 t. salt. Blend until smooth.

Combine chicken with enough dressing to moisten well. Add scallion, celery and raisins and mix well. Refrigerate for a couple of hours to allow flavors to blend. Serve at room temperature.
