Ingredients

Curried Chicken:

3-4 chicken breast halves

1 cup seedless grapes

1/2 cup walnuts

1 tsp. curry powder

1 T. freshly grated ginger

1/4 tsp. pepper

1/2 cup mayonnaise

1 tbsp. lemon juice

1/4 cup sour cream

romaine lettuce

Dressing:

1/3 cup sugar

1 tsp. salt

1 tsp. dry mustard

1/3 cup tarragon vinegar

2 tsp. onion juice

1 cup olive oil

1 1/2 T. poppy seeds

Preparation

Place chicken in saucepan and boil until done, about 20-30 minutes. Let cool and cut into bite size pieces. Place chicken pieces in bowl and add curry powder, pepper and lemon juice and toss lightly; refrigerate until cold. Combine grapes, walnuts, ginger, mayonnaise and sour cream and add to cooled chicken and mix well. Refrigerate until ready to serve.

Dressing Preparation: Combine sugar, salt, mustard and vinegar to a saucepan and boil to dissolve sugar. Cool. Add the onion juice and oil slowly and whisk until well blended. Stir in poppy seeds. Makes 1 1/2 cups.

Tear or cut romaine into bite size pieces and put on plate. Put a scoop of chicken salad in the middle of the lettuce and drizzle with the poppy seed dressing.
