Ingredients
1 package frozen peas (10 ounces)
3 tablespoons fresh lime juice (2 limes)
2 tablespoons vegetable oil
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
Basic Roasted Eggplant
1/2 cup roasted cashews
1/2 cup chopped fresh cilantro
Preparation
Cook frozen peas according to package instructions; rinse under cool water, and set aside.
In a large bowl, whisk together lime juice, vegetable oil, curry powder, coarse salt, and ground pepper.
Add Basic Roasted Eggplant, cooked peas, chopped roasted cashews, and fresh cilantro; toss to combine.
