Ingredients
1 cup uncooked quinoa
2 cups water or vegetable broth
1 tsp. ground ginger
1 tsp. curry powder
Salt to taste
1/3 c. raisins
1/3 c. cashews
Preparation
Bring water or broth to a boil. Add quinoa, ginger, and curry powder. Simmer, covered, until quinoa is soft and fluffy (approx. 12-15 minutes). Stir in raisins and cashews. Salt to taste.
