Ingredients
6 oz. curried rice (or plain)
4 slices fried and crumbled bacon
1/2 c diced celery
1/4 c diced green pepper
1/4 c raisins
1/2 c mayo
1 or 2 t curry powder (2 if not using curried rice)
1/2 c whipping cream
1/2 c each chopped peanuts and flaked coconut as topping
1 heaping T of chutney
Preparation
Cook rice and let cool. Mix rice, bacon, raisins, and vegetables. Combine mayo and curry powder. Beat cream til stiff and fold into the mayo mixture. Pour mayo and cream mixture over rice. About an hour before serving, toss mixture again, stirring in chutney and putting nuts and coconut on top.
