Ingredients

2 tablespoons canola oil;

2 dried red chilis;

2 bay leaves;

1 teaspoon panch foran(Indian five spice);

1 diced potato;

1/2 teaspoon turmeric;

1/4 teaspoon sugar;

1/4 cup water;

3 bunches scallions

1/4 teaspoon garam masala

Preparation

Over a high flame heat the oil and, once hot, add the chilis, bay leaves, panch foran and potato. Stir and cook 5 minutes. Add the turmeric,sugar and water. Turn flame to low. Cover and cook for about 3 minutes. If needed, add more water. Cut scallions into 1 1/2" pieces and add. Stir and cook covered another 4 minutes. Add the garam masala.
