Ingredients
1 tablespoon butter
1 onion, chopped fine
1 clove garlic, chopped fine
1 tablespoon fresh ginger, chopped fine
1 tablespoon curry powder
2 tablespoons sugar
2 teaspoons salt
4 cups water
15 oz. can pure pumpkin
1 can black beans, drained and rinsed
1 cup corn
Optional:
salsa
cheddar cheese
cilantro
sour cream
Preparation
Melt butter in a pot at medium heat. Add onion, cook for 3-5 minutes until softened. Add garlic and ginger and cook for 1 minute. Add curry powder, stir and cook for 1 minute. Add water and bring to a simmer. Add pumpkin, salt and sugar and mix well. Add the remaining ingredients and bring soup to a boil. Reduce heat and simmer for 10 minutes.
Serve soup with optional ingredients for more flavor.
