Ingredients
1 12oz can of solid white albacore tuna
1/2 tbs sweet curry powder
1 tbs lite mayonnaise
3 tbs low fat milk
1 tbs fresh squeezed lemon juice
1/2 tbs minced fresh chive
1/4 finely chopped sweet onion
1 tbs extra virgin olive oil
1/4 cup dried cranberries
1/4 cup sliced almonds
1/2 peas (not canned)
sea salt and cracked pepper to taste
Preparation
Mix mayo, milk, curry powder and lemon juice, chives salt and pepper in a bowl
Mix in tuna, dried cranberris, onions until even mixed.
Fold in peas and sliced almonds being careful not to break almonds or mash peas
Serve on bed of fresh greens and drizzle with Olive oil.
