Ingredients
2 tablespoons olive oil
3 medium zucchini, sliced length-wise and cut into 1/4 inch slices
1-28 ounce can diced tomatoes with juices
3/4 pound ground beef
1 large onion, diced
2 cups cooked rice
1 teaspoon curry powder
2 bay leaves
1 cup grated cheddar cheese
salt and pepper to taste
Preparation
In a large oven-proof skillet, heat olive oil. Saute ground beef until cooked through. Add onion and saute until translucent. Drain off any excess fat. Add zucchini, and saute 5 minutes, stirring occasionally. Add rice, tomatoes with their juice, curry powder and bay leaves. Simmer over medium heat about 15 minutes, stirring occasionally. Season to tase with salt and pepper. While mixture is simmering, preheat broiler. After mixture has simmered, and zucchini is soft, remove bay leaves and top with grated cheese. Place skillet under broiler until cheese is bubbly, about 5 minutes.
