Ingredients
1 cup rice
1 tbs butter
1 tbs oil
1 small onion chopped
1/3 cup frozen peas thawed
3/4 cup slivered red bell pepper
1/4 cup chopped golden delicious apples or any other cooking apple.
1/4 cup raisins
1/2 tsp curry powder
pinch of sugar
1/8 tsp salt
Preparation
In a med pot bring 2 cup water to boil add rice cover and steam 20-22 minutes on low heat. When done let chill in fridge 30 minutes.
Meanwhile in skillet heat butter and oil over med heat and saute onions until translucent. Add rest of the ingredients and reserved rice. Stir fry in large skillet over med/high heat until heated through.
Serve with toasted almonds on top if desired.
