Ingredients
1 tbsp extra virgin olive oil
2 tbsp curry powder
2 cups cubed boneless, skinless chicken breast
2 tbsp raisins
1 cup diced apple
2 tbsp chopped or slivered almonds
1/2 cup chopped celery
1 up low fat plain yogurt
Preparation
Toss chicken with the curry powder. Saute chicken in olive oil until cooked (about 8 - 10 minutes). Cool chicken completely. Add raisins, diced apples, chopped almonds, chopped celery, and low-fat yogurt to taste.
