Ingredients
Three chicken breast
1 cup chicken stock
1 Tb curry powder
1 red pepper
1 onion
1tsp cumin
Tb garlic
A pinch cinnamon
Salt
pepper to taste
3 cups rice
1 can black beans
Olive oil
1 Tb lemon juice
1 tsp thyme
1/2 tsp cream
1tsp corn starch
Preparation
MORO RICE boil water aNd add rice and salt. Let cook around ten minutes until ready. In a sauce pan add bean and bring to a boil. Add lemon juice, cumin, garlic, salt and pepper to bean. When rice is finished, add rice to bean and combine evenly.
CHICKEN
Combine salt, pepper, paprika and hot sauce in a bowl and add chicken. Let stand for 10 minutes. Preheat pan and add olive oil. Take chicken and add to the pan. Brown chicken for 4 mins on each side. Add chicken stock, red peppers, onion, garlic, curry, thyme, cinnamon and lemon juice and let simmer for 10 minutes. Add cream and corn starch and let sauce thicken. Place sauce over rice and enjoy
