Ingredients

8 oz Lentils

1/2 - 1 bag of chopped Kale

1 Tbsp Olive Oil

1 large onion chopped

3 garlic cloves minced

1 small tomato diced

2 carrots diced

3 - 4 yellow squash diced

1 box vegetable broth

1 jar Rogan Josh Curry

1 Tbsp curry paste (mild or hot)

Salt & Pepper to taste

Preparation

Saute onion, carrots and squash in olive oil until onions are translucent. Stir in tomato and garlic. Saute an additional 3 - 4 minutes. Add Lentils and vegetable broth. cover and cook over medium low heat until lentils are tender. You may need to add additional water or broth if lentils begin to dry out. Stir in curry, salt and pepper. Just prior to serving add in Kale and cook until wilted.
