Ingredients

3/4 c extra virgin olive oil

1/4 c wine vinegar

1 small clove finely chopped

2 Tbsp white wine

2 tsp soy sauce

1 tsp sugar

1 tsp dry mustard

1/2 tsp curry powder

1 1/2 tsp salt

1/2 tsp seasoned pepper

2-3 cups spinach

1/2 cup sliced mushrooms

5 slices bacon

2 hard boiled eggs

Preparation

Combine first nine ingredients in jar. Shake well and refrigerate.

Wash, dry and tear spinach.

Fry bacon until crisp. Drain and crumble.

Chop eggs

Toss spinach with mushrooms. Sprinkle with eggs and bacon. Pour dressing over top.
