Ingredients

1tbs olive oil

1 clove garlic

1 small onion, diced

1 carrot, cut into half moons

1 celery, diced

1 sweet potato

1 bay leaf

1 tbs tomato paste

3-4 cups liquid (water or stock)

1/4 tsp cumin

1/2 cup frozen peas

1/4 tsp garam masala

1 tbs peanut butter

1 tsp fresh basiil

salt and pepper to taste

Preparation

In a soup pot on med heat, sweat onions, celery, garlic and carrots in olive oil.

add liquid, tom paste, sweet potatoes, bay leaf and cumin.

simmer for 20 min, or until veg is tender.

add peanut butter, garam masala.

using a blender or masher, puree a potion of the soup to thicken it up.

add basil and peas. return to heat bring to a simmer.

season with salt and pepper
