Ingredients
7 lbs. Center cut pork loin
1/3 bottle of vinegar ( 1 ¼ cups )
5 tablespoons of salt
4 tablespoons of crushed red pepper
1 oz. of black pepper ( 2 tablespoons )
5 medium onions - cut up
¾ bottle of barbeque sauce
2-3 sticks of butter
¼ bottle of Tabasco sauce (optional)
Potatoes and corn for 10 (to be added after the pork is cooked)
Preparation
· Quarter the pork loin so that it fits easily into the pot and fill with water so the meat is covered. · Add all ingredients except potatoes and corn, bring to a boil, and simmer 3-4 hours until tender. · Remove pork from the pot and put on a greased cookie sheet, baste with the remaining barbeque sauce, cover and grill for 45 minutes. (Medium coals - not too hot) · Add another 1-2 sticks of butter to the pot, add cut up potatoes and cook for 45 minutes. · Add ½ ears of corn to the pot to cook for 30 minutes.
