Ingredients

1/4 c butter

1/4 c flour

1/2 tsp salt

1/2 tsp pepper

1 c chicken broth

1 c heavy whipping cream

2 tbl sherry

1 pkg spaghetti (~12 oz. more is ok.)

2 c turkey (or chicken) cubed

3 oz mushrooms

1/2 c grated parmesan (plus 1/2 c shredded on top)

Preparation

• preheat oven to 350 • break spaghetti in half (for ease of mixing with sauce later and boil until just al dente. meanwhile… • blend flour and dry stuff • melt butter in deep pan and add the dry stuff • cook over low heat, stirring until completely smooth and bubbly • stir in broth and cream, increase temp and boil, stirring constantly • stir in sherry, mushrooms, 1/2 c parmesan, and turkey • combine sauce with spaghetti and pour into an ungreased 2 qt casserole • top with 1/2 c shredded parmesan • bake 30 min or until bubbly and cheese has melted and just browned • don’t eat for a day afterwards because you gorged on your favorite comfort food again.
