Ingredients

1 head cauliflower, diced into small pieces

1 yellow onion, chopped

2 cloves garlic, diced

1 stalk celery, chopped

4 cups vegetable broth (Imagine is my favorite)

2 tbsp butter or olive oil

1 tbsp yellow curry powder (use less for milder soup)

Preparation

  1. Saute garlic, celery, and onion in butter or olive oil for five minutes, or until onions begin to soften.

  2. Add in curry and stir. Then add diced cauliflower and stir. Pour in broth, cover, and reduce heat.

  3. Simmer for about 25 minutes or until cauliflower is soft.

  4. Now grab your blender and add soup in batches, blending until somewhat smooth. (Be careful!) Leave some of the soup unblended for a little texture.

  5. Serve with a dollop of plain yogurt, a sprinkle of black pepper, and a sprig of cilantro.
