Ingredients
2-3 Tbsp Olive Oil
1 clove garlic finely chopped
about 1 Tsp. Tuscan herbs blend
(rosemary,sage,thyme,basil)
a couple sprinkles of fresh ground pepper
Spinach Leaves
5-6 Small(2-3inch pieces) grilled chicken strips
(pre-cooked usually in the frozen foods section)
Crumbled Goat Cheese
Thinly sliced zucchini (5-6 slices)
1 8inch pita flatbread
Preparation
- Pre-heat oven to 375 degrees
- Mix garlic,olive oil,herb blend and pepper in a small bowl
- with a spoon spread mixture over pita until evenly coated (there should be a little oil mixture remaining, if not make more!)
- evenly place zucchini on pita and drizzle a small amount of oil on each peice.
- cover pita with spinich leaves.
- place chicken pieces over leaves and sprinkle the goat cheese crumbles over that.
- gently drizzle remaining oil mixture over the whole pita.
- put on oven stone in oven for 10-12min or until edges are golden brown.
- cut into wedges and enjoy!
