Ingredients

1/2 cup unsweetened Dutch processed cocoa powder*

1/2 cup sugar

1 tablespoon cornstarch

1 1/2 cups of skim milk

*Droste, Lindt or Valhrona can be found in better grocery stores.

Preparation

Using a whisk, incorporate all dry ingredients in a medium sized bowl. Make sure there are no lumps.

Incorporate milk into the dry ingredients and mix or whisk very thoroughly.

Pour mixture into a medium sized nonstick pot and place over high heat. Bring to a boil and let boil for 1 minute. Stir with a wooden spoon. Lower to medium heat. The mixture will turn into a runny pudding consistency. Cook for 2-3 minutes longer, stirring frequently.

Remove from heat and spoon into dessert bowl.

Drizzle fresh squeezed lemon juice over the top and enjoy!
