Ingredients

5 fresh limes

1 pound frozen bay scallops

1/2 pound frozen shrimp

1/2 medium red bell pepper, finely diced

1 fresh jalapeno chili pepper, seeded and minced

4 scallions, finely diced

2 garlic cloves, minced

1/4 cup cilantro, chopped (or more to taste)

3 tablespoons olive oil

Salt and Pepper to taste

Preparation

  1. Juice limes, disgarding seeds.
  2. Combine juice, scallops, shrimp, red pepper, jalapeno, scallions, garlic, cilantro and oil into mixing bowl. Add salt and pepper.
  3. Cover and refrigerate, stirring occasionally, for at least 6 hours or overnight.
