Ingredients
1/4 cup vinegar
1/4 cup water
1/4 cup sugar
1/4 tsp. salt
dash of pepper
1 tsp. prepared mustard
2 eggs, well beaten
1 cup salad dressing
4 cups cooked, cubed potatoes (about 2 lbs)
2 hard cooked eggs, chopped or sliced
Minced onion, cucumber and/or celery to taste
Preparation
Combine first six ingredients in a 2-qt. saucepan; bring to a boil. Stir a little of the hot mixture into the eggs, then slowly add to mixture in pan. Cook until thickened; about 5 minutes. Remove from heat and add salad dressing. Mix remaining ingredients in bowl and pour dressing over. Sprinkle with paprika. Refrigerate until chilled.
